Hello, fellow Hungry people!

Lemon is such a great citrus, it’s so universal and so delicious (especially in a Gin and Tonic!) So I’ve just popped over to give you some delicious recipes I love to use with lemon, Lemon curd and Lemon Buttercream. You can use these for making cupcakes or cakes or hell even on toast if you like! I love these recipes so much and it is so simple to make. I hope you enjoy them as much as I do!

My Zingy Lemon Curd 

Ingredients:
2 eggs plus 2 egg yolks
3/4 cups caster sugar
80g cold butter
Zest and Juice of 2 Lemons

Method:
Whisk all of the eggs and sugar in a saucepan until smooth
Place over low heat and add butter, juice and zest of lemon.
Whisk until smooth and keep whisking until thick.
Strain through a sieve into a sterilised jar.
Curd keeps covered and in the fridge for 2 weeks

Tip: Pour the Lemon Curd into a jug through a sieve before pouring into the jar. Obviously, I realised this a bit late… Opps!

My Zesty Lemon Curd is very versatile on yummy on things like scones, toast, hot cross buns or my personal favourite, use it as the filling in cakes and cupcakes. It’s a citrus-y surprise inside your yummy cake.
